Spinach Kootu (Subzi)

Spinach

Leafy green vegetable like spinach provides more nutrients than any other food.Spinach is an excellent source of Vitamin A ,Vitamin C and other bone building nutrients including calcium and magnesium. It gives a strong protection against osteoporisis, heart disease, colon cancer, arthiritis and other common diseases. It functions as a antioxidant as well as anti - cancer agents.

For this Kootu you need
We normaly prepare kootu using moong dal , but instead if you add both channa dal and Thuvar dal they taste very nice.
1/2 cup of Moong dal, Thuvar dal and Channa dal
1 bunch of Spinach
1/2 tsp. of turmeric powder
1 tomato
1 onion
1 red chilly
2 - 3 garlic
A pinch of asafoetida
1 tsp of mustard and urad dal
1/2 tsp. of cumin
2 tsp of oil
Salt to taste

Preparation

Wash, clean and chop the spinach. Chop the tomato and onion.

In the pressure cooker add all your dals, asafoetida, turmeric powder, garlic, cumin and tomato,along with some water and leave it for 3 - 4 whistles.

Heat oil in a pan, add mustard, urad dhal ,curry leaves and red chilly.

Now add the onions and saute them well, add the chopped spinach fry it until it gets cooked.

Add  dal and salt . After a boil they are ready to taste.

Serve with rice or chapathi.........
