Mint thuvaiyal - A refreshing Indian condiment that goes very well with Hot Idli's or Dosa's. This thuvaiyal is nothing but a puree of mint leaves, along with red chillies, ginger and urad dal. I have not added coconut so we can keep this thuvaiyal for a week or two. I have a similar Mint thuvaiyal recipe with Coconut . Have a bunch of mint leaves is your fridge, then go ahead and prepare this recipe and you will definitely enjoy this verdant chutney
For this recipe you need
1 bunch of fresh mint leaves. leaves discarded from the stem and cleaned
2 tbsp. of urad dal
2 tbsp. of chopped ginger
2 tsp. of tamarind extract
2 tsp. of tamarind extract
10-12 red chillies
A pinch of asafoetida
Salt
Oil
Preparation
Heat oil in a pan, add the urad dal along with asafoetida and fry until it turns slightly brown, now add ginger and saute for a couple of mins.
Add red chillies and saute it. Add mint leaves, when the leaves starts to wilt ,remove from heat.
Allow them to cool and grind it along with salt and tamarind extract.
Mint thuvaiyal is ready to be served............
Serve this mint thuvaiyal with hot idli's and enjoy :)
