CARROT BEANS PORIYAL RECIPE
Carrot and Beans Stir fry - This is a fresh looking and great tasting dry curry made with carrot and beans. Poriyal or Stir fry is a common side -dish prepared with any vegetables of your choice to accompany with rice . A simple South-Indian meal comprises of rice,Sambar, rasam , poriyal and curd. These poriyals can be prepared with simple seasoning ingredients and flecked with coconut.Now let us see how this simple and delicious poriyal is prepared.

Cooking time : 15 - 20 minutes

Ingredients for carrot beans poriyal
- 1 cup of chopped Carrot
- 1 cup of chopped beans
- 1 medium sized onion , finely chopped
- 2 nos. of red chilly - split it roughly
- 1/2 tsp. of mustard seed
- 1/2 tsp. of urad dal
- A sprig of curry leaves
- 1/2 cup of grated coconut
- Salt
- Oil
Preparation
Heat oil in a pan, add mustard seeds, when it stops spluttering add urad dal, curry leaves and red chillies. Fry them for a minute.
Add the onions and fry until it becomes translucent.
Add the chopped carrot and beans, fry them for a couple of minutes , add salt and water until the veggies get immersed.Cover it with a lid and cook under medium heat until the water reduces and the veggies are soft.
Finally add the grated coconut, mix it gently and remove from heat.
Simple and delicious Carrot Beans Poriyal is ready to be served.
