MIXED VEGETABLE SAMBAR - Hello Friends, Today I am sharing a wonderful recipe. As we all know that Sambar is a staple food in SouthIndia, there are quite different versions belonging to different states as well, You might think what is wonderful and unique in this sambar.
Sambar can be prepared with vegetables like drumstick, brinjal, mooli, carrot, beans, raw mango,avarakkai(Saber Beans), lady's finger, pumpkin, etc. Usually, I prepare sambar with any one of these vegetables and the taste of each sambar is totally unique. Whether it is kara kuzhambu or sambar I am obsessed with the combination of drumstick and brinjal but after I tried sambar this way, this has become my favorite.
Mixed vegetable sambar or Kadamba Sambar as the name says, this sambar is loaded with lots and lots of vegetables and when it comes to taste, it is simply divine.
Now let's see the vegetables I used in preparing this sambar
- Avarakkai - sabre beans
- Beans
- Brinjal
- Bitter Gourd
- Carrot
- Drumstick
- Lady's finger
- Sweet potato
- Yellow pumpkin
So let's get started
First step: In a pressure cooker, add the lentils, (1 cup of thuvar dal + 2 tbsp. of moong dal) wash them well, and then add sufficient water along with turmeric powder, cumin seeds, crush and 2 garlic cloves, and a tsp. of sesame oil. Allow it to cook for 4 -5 whistles. Remove from heat. When the pressure is released, mash the dal well and keep it aside.
Second step: Prepare the vegetables needed for the sambar. Make sure the vegetables are chopped as required and just add 3-4 slices of bitter gourd (don't skip). Slice the onions and roughly chop the tomatoes.
Third step: In a heavy-bottomed pan add oil, when it turns hot add mustard seeds, after it stops spluttering add urad dal along with curry leaves, and asafoetida. Saute for a minute.
Fourth Step: Now add the onions along with little salt, when it turns translucent add the chopped tomatoes and saute for a couple of minutes.
Fifth Step: Tip in sambar powder along with turmeric powder, give it a quick stir. Add sufficient water. Pour the tamarind extract, When it comes to boil add all the vegetables along with salt.
Sixth Step: Finally when the veggies are cooked, add the dal and allow the sambar to boil for about 5-10 minutes. Garnish with fresh coriander leaves, remove from heat and serve it hot.

Mixed vegetable sambar or Kadamba Sambar - Sambar prepared with mixed vegetables.
Ingredients
- 1 cup of thuvar dal + 2 tbsp. of moong dal, cooked and mashed
- tamarind extract - (extracted from gooseberry sized tamarind)
- 1 onion - sliced
- 2 tomatoes - roughly chopped
- 1 carrot - chopped
- 1 drumstick, cut into 2 inches
- 2 small-sized brinjal, diced and keep it immersed in water till required
- 5 - 6 number of beans, saber beans, lady's finger - chopped
- 4 - 5 slices of bitter gourd
- Few sliced sweet potato
- Pumpkin cubed
- 1/2 tsp. of turmeric powder
- 1 1/2 tbsp. of sambar powder
- Oil
- Salt as required
For Seasoning
- 1 tsp. of mustard seeds
- 1/2 tsp. of urad dal
- A sprig of curry leaves
- A pinch of asafoetida
Method
