CARROT PEAS RICE RECIPE
CARROT PEAS RICE - Looking for an easy and delicious rice recipe, then definitely this is one of them. With just very few ingredients this instant and simple rice can be prepared in no time. When it comes to taste it doesn't fall under spiciness rather it has the touch of mild sweetness that comes from carrot and green peas. Pair it up with any spicy curries or with colorful fryums and enjoy.
So let's get started
First step: In a pressure cooker, add 1 cup of rice, rinse it well in water. Now pour 2 cups of water and allow it to cook for 3 whistles. Remove from heat. When the pressure is released, allow the rice to cool to room temperature.
Second step: Peel the skin from the carrot and grate it. Finely chop onions and garlic.
Third step: In a pan, add oil, when it turns hot add cumin seeds, saute for a minute. Add some cashews, when they turn golden brown add finely chopped onions, chopped garlic along with 2 green chilies slit lengthwise. Saute well until the onions turn translucent.
Fourth Step: Now add the grated carrot along with peas. Tip in 1/2 tsp. of turmeric powder along with salt. Allow the veggies to cook on a low flame(This probably will take around 10 - 15 minutes )
Fifth Step: Slowly add the cooked rice to this mixture and mix it well. Check for salt. Let this all be done on low flame.
Sixth Step: Finally when the veggies and rice are mixed well, remove from heat and serve it hot.

Ingredients
- 2 1/2 cups of cooked rice
- 1 medium-sized onion - finely chopped
- 2 medium-sized carrot - grated
- 1/2 cup of frozen green peas
- 3 garlic - finely chopped
- 2 green chilies - slit lengthwise
- 1/2 tsp. of turmeric powder
- 1/4 cup of grated coconut
- 1 tsp. of cumin seeds
- 5 - 10 no. of cashew nuts
- oil
- Salt
Method
