BLACK EYED BEANS MASALA


Black Eyed Beans Masala -  A healthy and delicious recipe . Its a wonderful  combination of onions and tomatoes along with black eyed beans. Serve  with hot roti's and enjoy :)


Serves : 4
Preparation time : 15 mins + overnight soaking
Cooking time : 20 mins.


For this recipe you need

1 cup of black eyed beans ( overnight soaking)
2 medium chopped onion, finely chopped
2 medium sized ripe tomatoes, finely chopped
1 tsp. of ginger-garlic paste
1/2 tsp. of turmeric powder
2 tsp. of chilli powder
1 tsp. of coriander powder
1/2 tsp. of garam masala powder
Salt
Oil

Preparation

Pressure cook the black eyed beans for 3 whistles.


Heat oil in a pan, add the cumin seeds, fry until dark. Add the onions and stir fry until golden brown.


Stir in the ginger-garlic paste and fry for a min. Add the tomatoes .


Add in the spice powders, mix well and cook until the onion and tomatoes get blended along with the masala.


Tip in the beans , check for salt and allow it to cook for a couple of mins. Finally garnish with fresh coriander leaves.


Black eyed Beans masala is ready to be served...........


Serve this delicious black eyed beans masala with roti's and enjoy :)

Note :

The curry should be quite thick, if needed add little water .

Adjust the spices according to your taste .
