Rajma with Brinjal Curry
For this curry you need
1 cup of Rajma
1 big sized brinjal
1 onion
1 Big sized tomato
2 green chillies
1 tsp. of Ginger- Garlic paste
1/2 tsp. of turmeric powder
1 tsp. of chilli powder
2 tsp. of coriander powder (you can adjust the powder acc. to your taste. I love the smell of coriander powder and hence 2 tsp.)
Salt as needed
Oil as needed
For Seasoning
1 tsp. of aniseed
2 -3 bay leaves
Preparation
Soak rajma in water overnight or atleast for 8 - 10 hrs.
In a cooker ,cook the rajma with sufficient water. Allow it for 3- 4 whistles. Preserve the water and keep the rajma aside.
Wash and chop the onions and tomato.
Chop the brinjals into small pieces and put it in water.
Heat oil in a pan. Add the seasoning ingredients.
Add the split green chillies and then add the ginger- garlic paste and saute it well.
Now add the chopped onions and tomatoes .
Add the turmeric powder , chilli powder and coriander powder .
Add the chopped brinjals and rajma mix them well. Sprinkle some water (use the preserved water) cover and cook in a low flame, until the brinjal is cooked well. Keep stirring and sprinkle water when needed and cover it with a lid.
Garnish with corinader leaves
Rajma with Brinjal curry is ready to taste....
Serve hot with Chapati/Naan/Rice..............
