ALOO GOBI STIR FRY


ALOO GOBI STIR FRY - This is a wonderful stir fry with the combination of  aloo and gobi. The veggies should hold their shape, so cook them  in low heat and sprinkle water as and when needed. This goes well with rice and with hot roti's :)


Serves : 4
Preparation time : 10 mins.
Cooking time : 25 - 30 minutes

For this recipe you need
  • 1 small cauliflower, washed and cut into florettes
  • 2 medium sized potatoes, peeled and cubed
  • 1 medium onion, sliced
  • 2 tsp. of sambar powder
  • A sprig of curry leaves
  • 1 tsp. of mustard and urad dal
  • Salt
  • Oil

Preparation


Heat the oil  in a pan, add the mustard seeds. When they pop, add the urad dal and curry leaves, fry for a minute.

Add the onion and fry until soft.

Add the potatoes , sprinkle little water and when it is half cooked, tip in the  cauliflower florettes, sambar powder and salt.Mix well

Sprinkle little water , reduce the heat and cook until the vegetables are completely done.

Remove from heat and serve hot.

Aloo Gobi stir fry is ready to be served..................



Serve this simple and delicious curry with rice or with any Indian flat bread and enjoy :)
