GOBI PARATHA RECIPE | CAULIFLOWER STUFFED PARATHA


Cauliflower | Gobi  paratha is a very popular Indian flat bread made with whole wheat flour stuffed with seasoned Cauliflower. 

Cauliflower is one of the vegetable which is liked by all, both by its look and by the variety of dishes that can be prepared with it. This vegetable  is rich in folic acid and other minerals. Is there anyone who doen't love Gobi Manchurian or Chilli Gobi or can we find anyone  saying NO to cauliflower pakoda with hot tea. Apart from these unique dishes ftom this veggie we can also add them in Kurma, biryani and so on . Today I am going to prepare a wonderful delicious dish with this cauliflower . Yes It is a simple paratha stuffed with this veggie . Usually when it comes to stuffed paratha everyone in my family prefers aloo paratha ,but this time I wanted to try different and  went with cauliflower. To my surprise they all loved it and now it has become one of our favorite dish.

There are quite few other versions in preparaing these Cauliflower paratha's, but I find this version of  mine simple and  taste's delicious. I have not used much of spices if you want an extra punch you can add and adjust spices accordingly. 

In just four  steps this delicious Paratha can be prepared . Now coming to the recipe ,
First Step - Wash and cut the cauliflower into medium sized florets . Boil water in a vessel with a pinch of turmeric powder. When the water comes to boiling add these florets , close the vessel. Remove from heat and keep aside for about 10 - 15 mins. This process of cleaning the cauliflower is to ensure that the florets are free from worms. Make sure that you don't overcook the florets in the water.

Seccond Step -Preparing Dough. In a bowl  add two cups of water and sufficient amount of salt. Gradually add lukewarm water and mix the dough well. Finally add little oil or ghee and knead the dough really soft, Cover it with a wet cloth and keep it aside

Third Step -Prepare the stuffing. Remove the florets from the water and grate them with a help of a grater. Heat oil in a pan ,add cumin seeds, when they turn brown add the chopped ginger and green chillies, fry it well. Now add the grated cauliflower , tip in the turmeric powder, garam masala powder along with little salt and mix well. Allow it to cook for about 5 to 10 minutes. Remove from heat.

Fourth and final step -Pinch a small portion from the dough and make a perfect ball shape, roll it , place the cauliflower mixture and seal the edges. Dust it in the flour and roll again and make a paratha. Place them in a hot tawa and when done serve it hot .

Cauliflower | Gobi paratha , a  very popular Indian flatbread simple and delicious to prepare.

Cauliflower Stuffed Paratha Ingredients

  • 1 medium sized cauliflower
  • A small piece of ginger- finely grated
  • 1 tsp. of cumin seed
  • 2 green chilly - finely choped
  • 1/2 tsp. of turmeric powder
  • 1/2 tsp. of garam masala powder
  • 2 cups of wheat flour
  • Salt – As needed
  • Oil

Method

  1. Wash the cauliflower and cut them into big sized florets
  2. Boil water in a vessel along with a pinch of turmeric powder, when it starts boiling add the cauliflower florets.Cover the vessel. Remove from flame and keep it aside.
  3. Meanwhile Combine the flour with salt in a mixing bowl. Add lukewarm water little by little and mix well. Drizzle little oil or ghee and knead well to form a soft dough. Leave it to rest for about 10 - 20 minutes.
  4. Now remove the florets from water and grate it 
  5. Heat oil in pan, add the cumin seeds, as they begin to darken, add the ginger and green chillies. Fry for them for a min.
  6. Add the grated cauliflower along with turmeric powder , garam masala powder and salt. Mix it gently. Cook it uncovered for about 10 minutes. Remove from heat.
  7.  Divide the dough into equal lemon sized balls. Flour the board , take a lemon sized ball and roll it . Place 2 tsp. of the filling in the center
  8. Seal the edges , coat them lightly with flour and roll out into flat discs.
  9. Heat a tawa and place the paratha , drizzle oil along its sides. As soon as brown spots appears bubbly, turn over  and when brown spots appear the paratha's are ready. Repeat the process with the remaining dough. 
  10. Delicious Gobi Paratha's are ready to be served.
  11. Serve it hot and enjoy

Notes

  • Make sure you don't overcook the florets or you find quite difficult in grating and also they don't taste well when overcooked
  • Preparing the dough with lukewarm water makes it really soft.
  • I have skipped onions, garlic and spice powders . You can try with adding them.
