SIMPLE MUSHROOM WITH CAPSICUM SOUP - STEP BY STEP
This is a simple and delicious soup with mushrooms and capsicum.Adding capsicum gives a unique taste to this soup. I think you remember the creamy & cheesy cauliflower soup - replace the cauliflowers with mushrooms and you get a creamy mushroom soup. In both ways the soup tasted yummy........:)
For this soup you need
10-15 nos. of button mushroom
1 onion
A small sized capsicum(we are going to use only half of it)
Butter/Olive oil
Salt
Pepper

Wash and chop the mushrooms, onion and capsicum.
Heat butter / Olive oil in a pan. (I used both).Add the chopped onions , fry them until they turn translucent.
Add the mushrooms and capsicum, saute it well.
Add 2 cups of water, close the pan and allow it to cook.
When the mushrooms get cooked , turn off the flame and allow it to cool.
Strain the water,grind them in the blender and filter it(by using the same water we have strained).
Add this filtered puree in the pan,along with salt and stir it gently.When it starts to boil, turn off the flame.
Delicious Mushroom soup is ready to be served.............

You can chop two mushrooms finely , saute them in butter and finally add them in soup while serving.
If you want you can also add a cup of milk at the final stage and also you can serve with grated cheese for children.
