Amaranth Leaves /Mulai Keerai Kootu


AMARANTH LEAVES/MULAI KEERAI KOOTU WITH DALS


Mulai Keerai Kootu - Leaves have high nutritional value and are extremely rich in anti-oxidants.Amaranth leaves can be red, green or purple. This is a simple recipe with dals. Serve with hot rice along with ghee and enjoy :)

For this recipe you need

1 bunch of fresh amaranth /mulai keerai
1/2 cup of thuvar dal
1/2 cup of moong dal
1/2 cup of chana dal
1 tomato
1/2 tsp. of turmeric powder
2 nos. of garlic pods
A pinch of cumin powder
Oil
Salt

For seasoning

1/2 tsp. of mustard and urad dal
2 red chillies
A pinch of asafoetida
A spring of curry leaves
Preparation

Pressure cook all the dals, with water along with turmeric powder, cumin powder and garlic, allow it for 4 to 5 whistles. Keep it aside.

Wash and clean the leaves well and chop them finely.


In a heavy bottomed vessel, add the keerai with sufficient water, and allow the leaves to get cooked.Now add the dals and mix it gently.Add required amount of salt and allow it to cook for 10 mins. in low flame.


Heat a tsp. of  oil in a pan, add mustard seeds, when they stop spluttering , add urad dal saute for a min, spilt and add red chillies along with asafoetida, followed by curry leaves. 

Finally add these to the dal.

Healthy delicious kootu is ready to be served.


Serve it hot with rice and enjoy :)

Note :

Adding all three dals, gives a thick consistency for this kootu.

If you want , you can grind 1 tbsp. of coconut with 1/2 tsp. of cumin seeds along with a green chilly, to a smooth paste and add it to the dal.
