ZUCCHINI STIR FRY  



ZUCCHINI STIR FRY - A simple and healthy dish with Zucchini. Less time is required to prepare it, as this vegetable cooks very fast. Adjust the spice powders according to your taste buds, adding ginger-garlic paste is optional. Make sure you don't overcook the veggie and this stir-fry goes well with roti's :)

Serves : 2
Preparation time : 10 mins.
Cooking time : 10 -15 mins.

For this recipe you need
  • 2 zucchini, chopped finely
  • 1 onion ,finely sliced
  • 1 tomato, chopped
  • 1/2 tsp. of turmeric powder
  • 1 tsp. of chilli powder
  • 1 tsp. of coriander powder
  • 1 tsp. of cumin seeds
  • Salt
  • Oil
Preparation

Heat oil in a kadhai and fry the cumin seeds for 1 minute.

Add the onions and fry until soft.

Add the chopped tomatoes and fry for a couple of minutes.

Now add the zucchini along with spice powders and salt. Stir it gently. 

Reduce the heat, cover and cook for about 5-10 mins or until tender. Sprinkle water if needed.

Remove from heat and garnish with coriander leaves.

Zucchini stir fry is ready to be served...............


Serve this zucchini stir fry hot with roti's and enjoy :)
