SAMBAR RECIPE - DRUMSTICK AND BRINJAL SAMBAR



SAMBAR : Sambar is prepared by cooking lentils with vegetables , spiked with a special blend of spice powder to enhance the taste and is  finally garnished with coriander leaves. 

In South India,a simple lunch will be rice, sambar along with a vegetable curry. Sambar is almost prepared everyday in Tamil Nadu. All most all vegetables can be used to prepare sambar , but drumstick and brinjal combination is the best. Serve this flavorful and delicious sambar along with potato fry and enjoy :)

Preparation time : 15 mins.
Cooking time : 25-30 mins

For this recipe you need
  • 1 drumstick , cut into 2 inch pieces
  • 2 small sized Brinjal, diced and keep it immersed in water till required 
  • 1/2 cup of Toor| Thuvar Dal ,cooked
  • Tamarind extract -( extracted from gooseberry sized tamarind) - 1 cup
  • 1 medium sized onion, roughly chopped
  • 1 medium sized tomato, chopped 
  • 1 1/2 tbsp. of Sambar Powder
  • A pinch of asafoetida
  • 1 tsp. of mustard and urad dal
  • A sprig of curry leaves
  • 2 red chilles
  • Handful of fresh coriander leaves for garnishing
  • Salt
  • Oil

Preparation

Pressure cook Thuvar dal , with sufficient water until soft . Keep it aside.


Heat oil in a pan, add the mustard seeds. When they crackle , add the urad dal, curry leaves and red chillies. Stir for a min. Add the chopped onions and fry it until soft.

Add the drumstick pieces and Brinjal, fry them for a couple of minutes. Tip in the tomatoes. Fry for a minute.


Add the tamarind extract , cooked thuvar dal and add sufficient water.


Add asafoetida, sambar powder, along with salt and mix it well.


Cover and cook for a couple of minutes , until the veggies are cooked and sambar turns little thick and bubbly. Remove from heat and garnish with coriander leaves.



Drumstick and Brinjal sambar is ready to be served...........................




Serve this delicious sambar with rice , any vegetable curries of your choice and enjoy :)
