BEETROOT RICE RECIPE
Beetroot rice
This is an easy and delicious recipe that can be prepared in under 30 minutes. Variety rice is always a great lifesaver for all the women out there because these recipes can be prepared in no time and with very few ingredients. I know most of the children don't like this veggie that much. Well in that case you can try making them this simple rice and serve with their favorite crispies. BEETROOT RICE

Beetroot rice is a delicious and simple rice that can be prepared in a jiffy.
Ingredients
- 1 big sized beetroot
- 1 onion, finely chopped
- 1/4 cup of fresh peas
- 1 tsp. of sambar powder
- 2 cups of cooked rice
- Salt – As needed
To temper
- 1 tsp. of mustard seed
- 1/2 tsp. of urad dal
- A sprig of curry leaves
- Oil
Method
- Wash, peel, and grate the Beetroot. Keep it aside
- Heat oil in a pan add the mustard seed, when it stops spluttering add the urad dal and saute for a min. Add the curry leaves
- Now add the chopped onions saute it until they turn translucent
- Add the grated beetroot along with the peas. Stir it well.
- Tip in the sambar powder and salt. Mix it gently.
- Cover and allow the beetroot to cook under a medium-low flame.
- When the veggie is done, mix the cooked rice in it and stir it gently.
- Finally, check for salt and remove it from heat.
- Beetroot rice is ready to be served.
Notes
- We can use the beetroot as grated or by chopping them into small cubes
- You can skip peas it is optional.
- For a richer taste, you can add grated coconut at the final stage.
- For kids, you can add a tsp. of ghee while serving.
